This dairy-free and gluten-free banana bread is a great breakfast treat.

 

Makes: 12 slices

Ingredients

• 1 and 1/2 cups gluten free self-raising flour

• 1/2 teaspoon ground mixed spice

• 2/3 cup firmly packed brown sugar

• 2 large over-ripe bananas, mashed with fork

• 2 eggs, lightly beaten

• 1/3 cup canola oil

• 1/4 cup rice milk

• 125g fresh or frozen blueberries

• non-dairy spread, to serve

 

1. Put dry ingredients in a bowl (flour, spice, sugar)

2. Mix wet ingredients (eggs, oil, milk) into dry ingredients

3. Add bananas

4. Cover blueberries in flour

5. Add to mixing bowl

6. Cook at 180oC for 40-45 minutes
